Now is a great time to pull out the new slow cooker you got for Christmas and put it to the test.
We found some recipes on MyFitnessPal.com that are above and beyond the traditional pot roast. Each outlines the nutrition per serving including calorie count, fat, sodium and carbohydrates. Here are a few we’re trying this week:
- Chicken Verde: If you’re looking to change up your weekly taco night – this is for you. You cook chicken breasts in a mixture of poblano chiles, jalapeno peppers, tomatillos, onions, garlic and green chiles for three and a half hours and serve alongside tortilla chips and a small salad.
- Stuffed Squash: Lamb, rice and an assortment of spices are combined and stuffed into yellow squash to make this Middle-Eastern inspired meal. You mix up onion, brown sugar, tomatoes and mint for the sauce, pour it over the squash and cook for six hours.
- Vegetable Pot Pie: If you’re in need of your veggies, this warm comfort-food dish has you covered. You cook the filling of potatoes, carrots, parsnip, celery, mushrooms, garlic, green peas, onion and sauce for three and a half hours then top it with biscuits and cook for another hour and 15 minutes.
