What better way to gear up for the warmer weather than with this heart-healthy black bean salsa from the American Heart Association?
Even if the wind is still howling outside, your kitchen will transform into a warm summer evening when you toss these peppers, black beans and corn together. That’s literally the only step in the directions, too! Could it be any easier?
You can enjoy the salsa with tortilla chips, or eat it on its own as a summery salad or side dish.
Ingredients:
- 1 15.5- oz. canned, no-salt-added or low-sodium black beans, drained
- 1 15- oz. canned, no-salt-added or low-sodium kernel corn OR
- 3/4 cup frozen corn, thawed
- 1 medium diced bell pepper OR
- 1 medium tomato, diced
- 1/2 cup red onion, diced
- 1 tsp. minced garlic from jar
- 2 Tbsp. chopped cilantro
- 2 Tbsp. cider vinegar
- 3 Tbsp. extra virgin olive oil
- 1 juice of lime
Directions:
- Toss all together, chill at least one hour.
