Kugel is a sweet noodle casserole. This version uses low-fat ingredients to reduce the calories.

Serves 12
  • 1/2 pound wide egg noodles
  • 4 tablespoons butter, melted
  • 16 ounces low-fat cottage cheese
  • 2 cups nonfat sour cream
  • 1/4 cup brown sugar
  • 4 whole eggs and 2 egg whites, beaten
  • 1/2 cup skim milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins
  • 1/2 cup slivered almonds

Heat oven to 375 F. Lightly grease 9 X 13-inch baking dish.

Boil the noodles for 4 to 5 minutes. Pour noodles into colander, then rinse and drain. Pour into a large bowl. Blend remaining ingredients except raisins and almonds. Combine the creamy sauce with noodles, and stir in the raisins. Pour into baking dish. Top with almonds.

Bake until kugel is set and top is golden brown, about 30 to 45 minutes.
