Fresh tomato crostini

Crostini is the Italian word for toast. These little toasts are topped with a tomato, basil and garlic mixture.


Serves 4
  • 4 roma tomatoes, chopped
  • 1/4 cup minced fresh basil
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • Freshly ground black pepper
  • 1/4 pound crusty Italian peasant bread, cut into 4 slices and toasted

In a medium bowl, combine the tomatoes, basil, oil, garlic and pepper.

Cover and let stand 30 minutes.

Divide the tomato mixture with any juices among the toast, placing the mixture on top. Serve at room temperature.
