Cheese latkes

These ricotta latkes are delicious topped with fresh fruit or thawed frozen fruit.


Serves 4
  • 1 cup part-skim ricotta
  • 3/4 cup whole-wheat flour
  • 3 eggs
  • 1 tablespoon sugar
  • 1/2 teaspoon double-acting baking powder
  • 1/2 teaspoon salt

In a large bowl, mix all ingredients together until you have a thick batter.

Lightly grease skillet and heat over medium heat. Spoon 1-2 tablespoons of batter onto hot skillet. Spread the batter into a thin circle.

Fry each latke for 2-3 minutes on each side until golden brown. Reduce heat if the outside browns faster than the inside is cooking. Serve warm.
